Meet Chef Michelle Kalan
I’m Michelle Kalan, the pastry chef and owner behind Michelle’s Mad Batter. Born and raised right here in Mitchell, South Dakota, I discovered my love for pastry back in high school—sparked by a Harry Potter–inspired Butterbeer cupcake. That magical moment set everything in motion.
A few years later, during a family trip to Charleston, South Carolina, I stumbled upon the Culinary Institute of Charleston—and instantly knew I’d found my calling. After graduating from Mitchell High School, I packed my bags and moved to foodie central, Charleston, to study Baking and Pastry, graduating in 2017.
While in Charleston, I trained at Kaminsky’s Dessert Café and Wild Dunes Resort, where I honed my craft and perfected what would become my signature item—our best-selling macaron. Charleston also holds another special place in my heart—it’s where I met my husband, Blake.
After a few wonderful years, we moved to Virginia to be closer to his family. There, my pastry career flourished as I joined James Madison University and later became the Pastry Chef at Virginia Mennonite Retirement Community—a title earned through dedication and hard work. I managed my own kitchen and pastry shop, creating large-scale custom orders while gaining invaluable business experience. It was during this time that I realized I wanted full creative control and the chance to bring my own vision to life.
So, I took a leap of faith—I quit my job, and we moved back home to Mitchell after six years away. Starting from my home kitchen and growing into a storefront bakery, I’ve cherished every moment of creating desserts for your celebrations, milestones, and everyday joys.
The Story Behind Michelle’s Mad Batter
Michelle’s Mad Batter was first born in Charleston, SC, on a rainy afternoon after classes ended and I found myself craving a new creative outlet. What began as a small passion project followed me through every move, growing alongside my skills and dreams.
When we returned to South Dakota, I knew it was time to bring that dream to life. With the love and support of my friends and family, Michelle’s Mad Batter became a reality—a place where from-scratch baking, creativity, and community meet.
Today, my specialties include macarons, decorated sugar cookies, cheesecakes, wedding cakes, and dessert tables—each crafted with passion, precision, and a touch of whimsy.

A big impact with a small footprint. Everything we do is to lessen our impact on the environment. We aim to sell everything we make, as that helps keep the cost down for you (our customers)
